Baked Blueberry french toast

Ingredients:
6 slices french bread, cubed
8 oz cream cheese, cubed
21 oz blueberry pie filling
6 large eggs
1/4 cup maple syrup
1 cup milk
1/2 t. cinnamon

I covered a 8x8 dish in foil then layer of plastic wrap for easy transfer once frozen.
Place half bread cubes on bottom. Layer cream cheese cubes on top. Spoon half the can of pie filling in dollops over top and complete layering with remaining bread cubes. In medium bowl, combine eggs, maple syrup, and milk. Whisk until well blended. Pour over existing layers. Spread remaining blueberry filling over top and sprinkle with cinnamon. Put in freezer while still in the dish and let become solid (flash freeze) then take the foil package out of the dish and wrap in freezer bag.

On serving day, Thaw completely. Preheat oven to 350. cover dish with foil, bake covered 30 minutes. Remove foil, and bake another 30 minutes. Place in individual bowls and serve with maple syrup. Enjoy!! Im excited to try this one!~

Freezer meals...my newest venture! First up Turkey Picante Pie

Ingredients:
1 lb ground turkey
1 large onion chopped
1 clove garlic minced
3/4 cup picante sauce
1 t. ground cumin
1/2 t. salt
1 LARGE tomato chopped
1 large zucchini diced
1/3 cup ripe olives sliced
1 1/2 cups shredded cheddar and monterey jack cheese
2 T. cornstarch

Serving day:
1/2 cup cheese
2 pie pastries

Cooking day:
Brown turkey with onion and garlic in large skillet. Stir in picante sauce, cumin, and salt. Simmer for 5 minutes. Remove from heat and stir un tomato, zucchini, olives, 1 1/2 cup cheese, and cornstarch. Freeze using freezer bag method.

freezer bag method:
Place meal in freezer bag (I use vacuum seal ziplocs) then place in a baking dish and set in fridge till cools completely. Then place dish in freezer till mneal is solid, and remove dish. This allows for stacking in the freezer.

Coupons.com

If your looking to get started but aren't sure where to obtain coupons check out http://www.coupons.com/

The coupon printer I mentioned in my last post will be needed to print these but there are some great coupons there!

Each one will only print twice per computer and there is a limit on prints they give out so you'll want to hurry and snag the ones your interested in. I typically print anything that I might want to try or things that I've seen on sale in the store before. New coupons come at the beginning of the month and the prints reset so you can print them again!

Right now you can get a $1/2 Pillsbury holiday cookies (Valentine heart cookies in refrigerated section) and my Walmart had them for 75c each last night! With 2 coupons I got 4 boxes of cookies for $1!! That's a good deal to me because my family LOVES cookies:)

And then of course your sunday paper is loaded! Especially those of you in Tyler! Killeens paper is a little scarce :(

Coupon types!

I said I would mention the coupon types a few days ago and got a little too busy to sit down and blog so here it is!

$1.00/1, $2.00/1, etc: One dollar off one product, two dollars off one product, etc.

$1.00/2, $2.00/2, etc: One dollar off two products, two dollars off two products, etc. You must buy 2 items to receive any savings; you cannot redeem the coupon on one product for half the value.

BOGO: Buy one, get one.  Will usually end with “free” or “half off” meaning buy one, get one half off, or buy one get one free.

B1G1, B2G1: Another way to write ‘buy one, get one’.  The “B” stands for “buy”, the G stands for “get”.  The numbers indicate how many of a product you must buy to qualify and the number of products you get when you redeem the coupon or offer.  B1G1= Buy one, get one.  B2G1= Buy two, get one B2G2= Buy two, get two

Pretty basic information but it is important to know if your using coupons!
